1 1/2 lbs. ground beef
1 lg. onion, chopped
1 (28 oz.) can tomatoes, chopped with juice
1 can kidney beans, undrained
1 can corn niblets, undrained (I use 2 cans)
1 (8-oz.) can tomato sauce
1 pkg. taco mix
Salt and pepper
4 c. water
Tabasco sauce, opt.
Brown meat and onion. Drain fat. Combine the rest of the ingredients in a large soup pot. Simmer for 1 hour (or more). If desired, garnish with grated cheese, sour cream and tortilla chips.
You can freeze this soup, too!

Beef Vegetable Soup
Recipe for my new favorite soup!
1-1 1/2 # ground beef (brown with 1 chopped onion)
2 cans beef broth
1 28 oz can of diced tomatoes
1 can green beans (drained)
1 can corn (drained)
1 can Rotel
1 cup cut celery
1 cup cut carrots
2 cups cut potato
1 cup cut okra
1 tsp salt
1 tsp Worcestershire sauce
2 tsp chili powder (or more if you like it spicy)
2-3 cups water
You can either slow cook this soup for 9-10 hours or bring to a boil and then let simmer for 1-2 hours.
I plan to cook this soup this weekend and then freeze individual servings for cold winter days!
